ZESTY FRITTATA KIND OF DAY

It's Friday. It's cold. The kind of cold that drives me to the bread basket seeking buttery toast and sugary tea and comfort food. When my mind says healthy and my cravings say carbs and sugar, I overcome the cravings with a super savoury indulgence.

Today's it’s a zesty frittata with lots of greens sautéed with ground cumin and coriander seeds, green onions, radicchio, frozen grape tomatoes, colourful peppers. Lightly whisked eggs are poured over the veggies and left to set on low-medium heat.

For extra kick I serve with tomatillo sauce and add a pinch of chili flakes to garnish.
